Abstract

Ziziphus mauritiana Lam., a nutrient-rich fruit, is highly perishable and prone to rapid deterioration after harvest. This study investigated the effect of postharvest treatments- Aloe-vera gel coating, wax coating and cold storage-on the physiochemical properties of Ziziphus mauritiana. The results showed that Aloe-vera gel coating significantly, retained weight loss and maintained higher levels of chlorophyl and carotenoid content compared to untreated fruits. Wax coating improved fruit appearance and reduced moisture loss, while cold storage-maintained fruit freshness and slowed down spoilage. The combination of Aloe-vera gel coating and cold storage showed the most promising results, preserving fruit quality and extending shelf life. These findings suggest that post-harvest treatments can effectively enhance the physiochemical properties and shelf life of Ziziphus mauritiana, ensuring its availability and nutritional value for consumers.
